How many pages long should a curriculum vitae be?

I'm interested in becoming a post-secondary educator where they use "Curriculum vitaes" instead of resumes......... about how many pages should a curriculum vitae be? Is three pages ok? or should I limit it to 2 pages?

1. I have seen an educator's c.v. that is over 40 pages long, listing every newspaper column he ever wrote, every NBC news interview he gave, every professional article he co-authored, etc, not to mention actual jobs, volunteer activities up the wazzoo, and a list of professional clients. All we wanted was a two-page description of his abilities and credentials and a few references, so we didn't hire him.
